In selecting wines to be served at JRooL, our focus is on the expression of varietal and the harmony that can be achieved when matching food and wine. Like the food ingredients that we use, we look for wines that are true to their origin and reflective of the environment in which they have been made.
Wine of the moment
Obtained from a selection of traditional grape varieties from the Binissalem-Mallorca district: Manto Negro, Callet, Cabernet Sauvignon and Syrah: Cherry red in colour with a fruity aroma and light, toasted overtones including vanilla. Its velvety texture contains a fruity and thick structure with smoky and spicy hints.
Harvested during the second half of September from the vineyards of Santa Maria del Camí (Binissalem-Mallorca), once the stalks have been removed the grapes are pressed, maceration takes place for 10 days in steel tanks at 28°C. After fermentation the wine is left in American oak barrels for approximately 2 months.
This is a fabulous wine that is enjoyed on its own or with roast meat dishes.
